Naturally flavored almond butter!!

Almond is known for its nutritional value. Almonds contain lots of healthy fats, fiber, protein, magnesium and vitamin E. The health perks of almonds include lower blood sugar levels, reduced blood pressure and lower cholesterol levels. They can also reduce hunger and promote weight loss.

This recipe needs a good food processor but once made becomes a favorite for kids and adults both!! This recipe takes about 15-20 minutes based upon food processor and to get desired consistency  which is until almond starts leaving its own oil and mixture becomes creamy and smooth in texture. You might have to keep on stopping your food processor in between in order and make sure that the mixture is closer to the blades and not too much near the wall.

Grilled Eggplant Margherita Packets!!

Low calorie dish bursting with Italian flavors!

You can use either electric or stove top grill pan. Investing in good cooking tools goes a long way. I am in love with my Staub cast iron steam-grill pan and definitely worth the cost.


  • 4 thick slices of eggplant
  • Olive oil to brush on eggplant
  • Ground black pepper
  • Salt to taste
  • Mozzarella cheese- any shape
  • 8-10 basil leaves chopped
  • 7-8 chopped sun-dried tomatoes in olive oil


  • Heat your grill pan on low-medium heat, brush it with some olive oil
  • Brush olive oil on both sides of eggplant slices and season with some salt and black pepper

  • Grill the seasoned slices on both sides for 2 minutes on each side
  • Add mozzarella cheese, basil and sundried tomatoes on one half of the slice and fold the other half on top. Press a little so that mozzarella starts melting due to heat

  • Grill for 1-2 minutes more and serve after sprinkling some Parmesan cheese(optional)

Cherry Chutney with a hint of mint!

Simple recipe with flavorful results. This is Indian Chutney(relish) made with vibrant Cherries and just the right amount of mint leaves so that the flavor of mint does not overpower the dish.

Ingredients: Cherries pitted and chopped roughly, 5-7 sprigs of mint, half of small onion chopped, 1 tsp chopped ginger, 1 tbsp oil, 1.5 tbps sugar, salt to taste, 1tsp ground cinnamon or a stick , 1tsp chopped green chili, lemon (optional)


Tools used: spatula, pan, blender
