Tomato, basil and lemongrass soup!

Aromatic, flavorful soup with great health perks.

  • Ginger, garlic provide antioxidants
  • Lemongrass is used for treating digestive tract spasms, stomachache, high blood pressure, convulsions, pain, vomiting, cough, achy joints (rheumatism), fever, the common cold, and exhaustion.

Depending on the processing power of your blender, you might have the need to run the soup through a sieve and that is why my recommendation always is to invest in kitchen tools if you love to cook. I love using Vitamix because it makes the soup creamier without adding milk and also you don’t have to strain it as well. Watch the recipe video below:

Minestrone Soup!!

Easy, healthy and low calorie Italian soup recipe for those cold wintery nights!!

Minestrone means a soup with vegetables and pasta combined in Italian.

Ingredients: 

  • Seasonal vegetables cut into small pieces such as colored bell pepper, carrots, zucchini
  • Olive oil – 2tbsp
  • 1/3 cup celery- chopped
  • 3-4 tomatoes with skin removed after boiling for 5 minutes
  • ½ cup finely chopped onions
  • 2-3 finely chopped garlic cloves
  • 2-3 bay leaves
  • 1/3 cup chopped parsley
  • 3 tsp ground black pepper
  • 4 cups vegetable broth or 2 cups vegetable broth and 2 cups water
  • Salt to taste

Asparagus Soup with Tomato Mozzarella and Basil Bruschetta !!

Hot soup with toasty Bruschetta – perfect for a light lunch or dinner on a cold day.

You don’t really have to buy a French baguette  in order to make this Bruschetta. Any bread that you have at home which can hold moisture, will do.

Ingredients: 

For Asparagus Soup:

  • 3 cups roughly chopped and trimmed asparagus
  • 1 cup roughly chopped red onion
  • 2 cups of vegetable stock – store bought or homemade or water
  • 3tbsp olive oil
  • 1 tsp ground black pepper
  • ½ tsp dried parsley
  • Salt to taste

 

For Bruschetta:

  • 4 slices of bread
  • 1 tomato roughly chopped
  • 1 clove of garlic
  • 4-5 Basil leaves cut into strips
  • Mozzarella cheese cut into blocks
  • 1tbsp extra virgin olive oil
  • ½ tsp ground black pepper
  • ½ tsp dried parsley
  • ½ tsp salt

Tools used: saucepan, spatula, blender

Zucchini Cashew Soup!

A soup which is  not only so easy to prepare but also very yummy, nourishing and satisfying. You can have it as it is or with any sandwich.

Ingredients: Zucchini roughly chopped, cashew nuts roughly chopped (just 1/3 cup), onion roughly chopped, few garlic cloves roughly chopped, crushed black pepper, olive oil (just 2 tbsp), dried or fresh parsley, salt to taste
